Delicious Courgette cake

At this time of year courgettes appear almost overnight. Here’s the recipe for a delicious cake that I have tried and tested.
You can make this cake vegan by replacing the egg with a gel made from one dessert spoon of chia seeds and four dessert spoons of water whisked together.
I make my courgette cakes in a 1lb loaf tin, greased with a little Vitalite ( vegan spread), baking for 45 mins at 160 degrees. Test the bake with a skewer, which should come out cleanly. Ovens and times may vary slightly.
Into a large bowl grate 7 oz courgettes. Add 5 oz light brown sugar, 4 oz veg oil ( I use olive) and I egg or the chia gel. Sift in 7 oz plain flour, ½ teas salt, ½ teasp bicarb, ¼ teasp baking powder and 1 teasp ground cinnamon. Grate in the zest of one lemon. Give it a good mix and turn it into the prepared tin.
